Recipe for Guy Gordon's mother's beef stew

Beef Stew Bordelaise is a flavorful medley of vegetables and beef simmered in a tomato red wine sauce.

 

1 ½ lbs. beef chuck or stew meat

1 T. oil

1 medium onion

1 crushed garlic clove

¾ C. red wine

¼ C. water

1 can condensed tomato soup

½ t. salt and pepper

½ C. ketchup

¼ t. each thyme and basil, dried or fresh

3 medium carrots cut on the diagonal

4 yukon gold potatoes, quartered

1 ½ C. celery cut on the diagonal

1 C. green beans (optional)

Lightly brown meat in oil.  Add Onion and garlic and saut3e until transparent.  Sprinkle with salt and pepper.  Add soup, water and wine.  Cover and simmer 30 minutes.

Stir in ketchup and herbs.  Arrange vegetables over meat, cover and simmer 1 ½ hours until meat and vegetables are tender. 

Add more water if necessary.

½ C. lemon juice may be substituted for wine, and increase water to ½ C.
