DETROITTAP at MGM Grand Detroit Short Rib Chili

3 Ancho Chili Peppers, rehydrated, seeded and pureed in water
1/3 Cup Cumin, Ground
¼ Cup Chili Powder
½ Gallon Water
1 tbsp. Dried Oregano
7 pounds Short Rib Beef, medium diced
1 pound Bacon, diced
4 Onions, diced
3 Green Peppers, diced
8 Garlic Cloves, minced
2 Jalapenos, chopped
1/3 tsp. Red Pepper Flakes
2 tbsp. Tomato Paste
1 Bay Leaf, whole
8 Fresh Tomatoes, diced
1 bunch Cilantro, chopped
1 Cup Tomato Paste
2 tbsp. Chipotle Peppers Puree
¼ tsp. Cayenne Pepper
3 Lemons, squeezed
1 pound, 10 cans Black Beans
1 pound, 10 cans Pinto Beans

Salt, Pepper, Lemon, Pepper Flakes and Water to finish

Method:

Render bacon. Add onions, peppers, jalapenos and garlic. Caramalize.

Add beef, ancho paste, cumin and oregano. Brown.

Add Tomato Paste and mix well.

Add water and simmer for 1.5 hours.

Add tomatoes, pepper flakes, black beans, chili beans and braise for three minutes, or until beef is tender.

Finish with cilantro, salt, pepper and lemon juice. Add water if necessary.
