New Orleans inspired remoulade and shrimp

Makes 8-10 appetizer servings
3/4 cup diced white onion
2 cloves garlic
1/2 cup diced celery
1/4 cup diced green onion
1/4 cup chopped parsley
1/3 cup Creole mustard or any spicy brown mustard
2 Tbsps. Meijer Ketchup
1 Tbsp. McCormick paprika
1/2 cup Meijer extra virgin olive oil
1 Tbsp. fresh lemon juice
1/8 tsp. McCormick Cayenne pepper
Salt and pepper to taste
1 1/2 pounds Meijer cooked shrimp
1. Place all ingredients, EXCEPT shrimp in a food processer and process until well combined.  Make ahead tip:  Sauce will keep refrigerated for one week.
2. Pour the sauce in a bowl with 1 1/2 pounds cooked, chilled shrimp and toss to coat the shrimp completely. Serve the shrimp on a bed of lettuce greens.
